1 whole chicken
4 Tbsp achuete oil
2 pc garlic
3 pcs bay leaf
cup vinegar
4 Tbsp patis
2 pcs star anise
1 pack Hunt's Tomato sauce 115g
2 tsp pepper
3 cups stock/water
½ cup shitake mushrooms, sliced (or button mushrooms)
½ Tbsp onion chives (for garnish)
Cornstarch mixture
2 Tbsp cornstarch
3 Tbsp water


  1. Sauté whole chicken in achuete oil moving it around on all sides. Add garlic, bay leaf, and vinegar.  Add patis, star anise, water/stock and pour in Hunt's Tomato Sauce. Simmer until chicken is tender.
  2. Add shitake mushrooms and simmer. Thicken with cornstarch mixture.
  3. Garnish with onion chives.
