For the achuete oil:
5 Tbsp cooking oil
2 Tbsp achuete seeds
For sauteeing:
4 Tbsp achuete oil
1 Tbsp garlic, minced
2 Tbsp carrots, finely chopped
½ can whole kernel corn, drained
1 can corned beef 210g
½ tsp sugar
1 can Hunt's Pork & Beans 390g
4 cups cooked rice
¼ tsp salt
¼ tsp pepper


  1. For the achuete oil: Heat oil in a pan, then add achuete. Turn off heat, steep for 15 minutes before straining.
  2. Saute garlic, carrots, whole kernel corn, and corned beef in achuete oil. Add sugar and Hunt's Pork & Beans.
  3. Cook for 2 minutes, then add rice. Mix well and season with salt and pepper.
